Innovative cutting technology for new consumer needs
In some cases, the requirements for the new cutting processes differ significantly from the processes involving meat: vegetarian and vegan products generally have a soft consistency. Accordingly, chunks are cut using blunt tools – something which would be unthinkable with meat or cheese, but which is absolutely essential for meat alternatives.
The cutting temperature for veggie products is also different from conventional meat processing. holac machines allow veggie products to be processed at comparatively high temperatures and fresh out of the extruder. The exact temperature depends on the individual product and can be between -3 and +70 degrees Celsius.
Vegan cheese is also becoming more popular in the food industry. With cheese cutters from the holac range, these products can be cut just like conventional cheese.
